- 3 cups cucumber, diced
- 1 pint (283g) cherry tomatoes, cut in half or in four
- 1/4 cup fresh parsley chopped very finely
- 1/4 cup chopped mint very finely
- 2 tablespoons chopped fresh chives
- Salt and pepper from the mill
- Cider vinaigrette:
- 1/4 cup mayonnaise
- The zest of 1/2 lemon
- 2 tablespoons Apple and Pear cider by Lone Tree
- Salt and pepper from the mill
In a large bowl, add all the ingredients for the salad and toss.
In another bowl, add the ingredients for the dressing and season with salt and pepper. Toss.
Pour the vinaigrette over the vegetables and mix. Reserve in the fridge for 30 minutes then serve!
