This smoked bacon laden, Lonetree Cider kissed, Salt Spring Island mussel dish is the perfect warm savory plate for one or two!

Ingredients
- 1 lb cleaned Salt Spring Island mussels
- Hickory smoked bacon cut into lardons
- Shaved fennel
- Minced garlic and shallot
- ½ cup Lonetree Authentic Dry Cider
- Lemon Juice to taste
- Sliced sourdough baguette to serve
Directions
Render fat from bacon over medium heat until lardons are crispy. Add garlic shallot, fennel and mussels to pan, season with salt and pepper and sauté for two minutes. Turn heat up full, add Lonetree Cider and cover pan to steam mussels. Add lemon juice at the end and check seasoning. Serve in wide bowl and garnish with freshly chopped parsley and a half lemon.
