Cajun Shrimp Tacos

@basicswithbails is bringing us all the flavour with these Cajun Shrimp Tacos and Lonetree Ginger Cider! ⁠

Cook Time: 4 minutes⁠

Servings: 8 tacos⁠

⁠

INGREDIENTS:⁠

⁠

CILANTRO LIME SAUCE⁠

1/3 cup light mayonnaise⁠

1/3 cup plain greek yogurt⁠

3 tbsp fresh cilantro, chopped finely⁠

2 tbsp fresh lime juice⁠

1/2 tsp garlic powder⁠

Salt and black pepper⁠

⁠

CAJUN SHRIMP⁠

450g raw shrimp - deveined and tails removed⁠

1/2 tsp cajun seasoning⁠

1/2 tsp cumin⁠

1/2 tsp chili powder⁠

1/2 tsp paprika⁠

Salt + black pepper⁠

⁠

TOPPINGS⁠

8 corn tortillas⁠

1 1/2 cups red cabbage⁠

1 avocado⁠

2/3 cup feta cheese⁠

⁠

DIRECTIONS:⁠

1) In a small bowl, mix together the light mayo, plain Greek yogurt, fresh cilantro, fresh lime juice, garlic powder, salt, and pepper. Adjust the seasoning to taste. Refrigerate until you're ready to assemble the tacos.⁠

2) In a separate bowl, toss the shrimp with cajun seasoning, cumin, chili powder, paprika, salt, and pepper until evenly coated.

3) Heat olive oil in a large skillet over medium - high heat. Add the shrimp and cook for 2 - 3 minutes on each side, or until they’re pink and cooked through. Remove from heat and set aside.⁠

4) Warm tortillas in a dry skillet over medium heat for about 30 seconds on each side or until they’re pliable.⁠

⁠

5) Spread a spoonful of the cilantro lime sauce on each tortilla. Top with some sliced red cabbage, crumbled feta cheese, avocado slices, a few shrimp and more fresh cilantro. If you like, serve with lime wedges on the side for an extra squeeze of fresh lime juice.⁠
