Peach Tomato Feta Salad

Peach Tomato Feta Salad by @basicswithbails is serious salad goals and it pairs perfectly with our newest cider! ā ā 


Prep Time: 15 minutesā 


Servings: 4 servingsā 


INGREDIENTS:ā ā 


PEACH SALADā 


3 ripe peachesā 


1 pint multicolor cherry tomatoesā 


1 green onionā 


Handful fresh basil leaves (approx 15 leaves)ā 


2/3 cup feta cheeseā 



DRESSINGā 


2 tbsp olive oilā 


2 tbsp red wine vinegarā 


2 tsp maple syrupā 


1 tbsp fresh lemon juiceā 


1/2 tsp garlic powderā 


Salt + black pepperā 



DIRECTIONS:ā 


1) Cut your peaches into thin slices. You want them to be ripe but still firm enough to hold their shape.ā 


2) Cut the cherry tomatoes in half, thinly slice the greenā 


onions, and chop the basil leaves into smaller pieces. Fresh basil is key for that aromatic touch.ā 


3) In a small bowl, whisk together the olive oil, red wine vinegar, maple syrup, lemon juice, garlic powder, salt, and pepper. Taste and adjust the seasoning as needed.ā 


4) In a large bowl, combine the sliced peaches, halved cherry tomatoes, crumbled feta cheese, sliced green onions, and chopped basil leaves.ā 


5) Pour the vinaigrette over the salad and gently toss everything together until well coated.ā 


6) You can serve this salad immediately or let it chill in the fridge for about 15-20 minutes to let the flavors meld together.ā 


7) If you want, sprinkle a little extra feta and some more fresh basil on top before serving.ā
